Local Military Veteran and Seasoned Foodservice Professional Opens Upscale Italian Restaurant at Laulani Village

January 28, 2014 //Franchising.com // EWA BEACH, Hawaii - The wait is over in Ewa Beach. - Russo's Coal-Fired Italian Kitchen arrives as one of Oahu's most highly anticipated restaurant openings. Now, residents, the local workforce, commuters and visitors in the island's fastest growing area can savor the tastes, aromas and unmistakable ambiance of an authentic New York-style Italian restaurant and pizzeria. The well known upscale Italian restaurant that brings to life old-world charm and hospitality opens this week at 91-1121 Kehunui Drive #114 in Ewa Beach's Laulani Village (situated at the corner of Fort Weaver Road and Keaunui Drive in Ewa Beach).

"Right from the moment customers walk in, they will know they've come somewhere special. They're getting a truly authentic experience," said Robert Carlisle, the owner and operator of Russo's Coal-Fired Italian Kitchen in Ewa Beach who previously spent 10 years with the U.S. Army based in Hawaii. "Everything is made with fresh ingredients. From our coal-fired brick oven pizza and the calzones to the pastas with fresh seafood, these are traditional Italian dishes served just the way our guests expect."

Carlisle, a local resident and experienced foodservice professional, opens the brand's first Hawaiian location. A strong leader who honed his management skills in the military, Carlisle developed a passion for entrepreneurship through his post-military career working in beverage sales.

"Opening in Ewa Beach is a momentous occasion for Russo's Coal-Fired Italian Kitchen," said company CEO Anthony Russo, a formally-trained chef who opened his first Russo's New York Pizzeria in 1992. "We couldn't be happier about carrying on the Russo's tradition with a new restaurant in Ewa Beach and doing so with as gifted of an individual as Robert. With his qualifications, Russo's has a bright future in Hawaii."

To commemorate the Ewa Beach opening with the traditional Hawaiian blessing, the restaurant will host the Ewa Beach Hula Group on Saturday, February 1, 2014. A grand opening celebration will follow a few weeks later. Russo's Coal-Fired Italian Kitchen is open for lunch and dinner, with carry-out, delivery and an extensive catering menu available. The restaurant features a wine and beer bar with a selection of domestic and imported options. At more than 2,600 square feet and an outdoor seating patio, the Italian eatery can host 110 guests inside and out.

The Ewa Beach Russo's Coal-Fired Italian Kitchen is the first Russo's Restaurant to open in Hawaii and will act as a flagship store for future island locations. The expansion of the brand in the state signals the continuation of significant franchise growth for the brand throughout the United States. In addition to Hawaii, Russo's has completed agreements to open more than 10 new restaurants in Oklahoma and Texas. The 12-month period from early 2013 to today represents the brand's most aggressive growth phase.

Russo's Coal-Fired Italian Kitchen and its traditional Italian recipes trace their origins to a tight-knit family where the kitchen was the center of all activity. As a young child, Anthony Russo helped his grandmother role dough for cannoli, carefully wrapping them around four-inch wooden broomsticks to get the right shape before it cooked. By the age of 12, Anthony was learning authentic Italian recipes. Earning the Chef's distinction as an 18 year-old, Anthony honed his skills as a culinary expert working in his parent's fine Italian restaurant and then opened his own pizzeria while still a young man. He then opened Anthony's Pizzeria in Clear Lake, Texas, and later two restaurants in Houston; one named Café Anthony and the other named Russo Café Anthony, an upscale Italian restaurant.

Complete Russo's Coal-Fired Italian Kitchen menu options are available at www.nypizzeria.com and www.facebook.com/RussosRestaurants.

Highlighting the performance of Russo's Coal-Fired Italian Kitchen and Russo's New York Pizzeria is the 24 percent average net profit and the average food cost of well below the national average at 21 percent. Plus, average gross sales are $550 per square foot. For entrepreneurs interested in the franchise opportunity, Russo's requires a low down payment of 20 to 30 percent to launch your own restaurant. Third party financing is available.

The Russo's name has become synonymous with coal-fired New York-style pizza and authentic Italian meals. Beyond the brand's specialty pizzas, menu items include fresh salads (Insalata), soups (Zuppe) and homemade pastas. Authentic Italian cannoli, fresh seafood, chicken, veal and flatbread sandwiches are just some of the distinctive dishes on the menu. Ewa Beach's location will also offer local favorites such as pulled pork, barbecue chicken and Hawaiian-style pizzas.

About Russo's Coal-Fired Italian Kitchen

Presenting a true New York-style pizza tradition, Russo's Coal-Fired Italian Kitchen lives by a family promise that dates back more than half a century, "If it isn't fresh, don't serve it." This motto has served Russo's Coal-Fired Italian Kitchen well since founder Anthony Russo opened his first pizzeria more than two decades ago. The brand's success has inspired the launch a number of successful franchises, and today more than 30 Russo's restaurants are operating and dozens more are expected to open in the next three to five years. The concept has gained recognition for its remarkably fresh food and the affordable price of menu options. Preparation of pure ingredients and the execution of memorable Italian food keep customers coming back for more. Chef Anthony's commitment to maintaining the freshest products insures that all customers who walk through the door, irrespective of which Russo's location, receive the bona fide Russo's experience.
