Chef Russo favorite childhood soup was tortellini il brodo what Nona used to prepare growing up in New Jersey was a childhood favorite Sunday soup tradition at Nona house was prepared with very simple fresh chicken broth, chopped baby spinach, diced Roma tomato and slices of chicken breast with ricotta cheese filled tortellini was our childhood meal so after 40 years we been making the same soup in our New York pizzeria kitchen and have decided to offer it for lunch special as an unlimited soup and salad combo for $9.95 this soup is simple and very healthy filled with high protein and fresh spinach This comforting soup is made with tender chicken, cheesy tortellini, and an array of fresh spinach and Roma tomatoes, all simmered together in a flavorful broth. Today, I'm excited to share this recipe with you so you can enjoy a bowl of warmth and goodness, too.

Ingredients:

  • 1 tablespoon olive oil
  • 1 cloves garlic, minced
    -1/2 cup diced Roma tomato
  • 6 cups chicken broth
  • 1 lb boneless, skinless chicken breasts, diced
  • 1 teaspoon dry oregano
    ⁃ pinch fresh parsley
  • Salt and pepper to taste
  • 9 oz refrigerated cheese tortellini
  • 2 cups fresh spinach leaves
  • Grated Parmesan cheese, for serving

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the garlic and cook for an additional minute until golden brown
  2. Pour in the chicken broth and bring it to a simmer. Add the diced fresh breast chicken, pinch fresh parsley , salt, and pepper. Let the soup simmer for about 15-20 minutes until the chicken is cooked through.
  3. Add the cheese tortellini to the pot and cook according to the package instructions, usually about 7-9 minutes.
  4. Stir in the fresh spinach leaves and 1/2 cup diced Roma tomato let them wilt in the hot soup for a minute or two.
  5. Taste the soup and adjust the seasoning with salt and pepper if needed.
  6. Ladle the soup into bowls and sprinkle with grated Parmesan cheese before serving.
